Eight Years in the
Mountains of Benguet

Black Falcon Coffee was born from an extraordinary journey. Michael McFadden, CEO of PhilCana Coffee Company, discovered the viability of Benguet Province, Philippines, to produce world-class specialty coffee β€” an elevation and climate that rivals the finest growing regions on earth.

Working hand-in-hand with Indigenous Peoples of Benguet, PhilCana built a network of partner farms in some of the most remote mountains in the Philippines. Some partner farmers live in areas where it takes eight hours of walking on foot to reach the road β€” and more than ten hours to gather just one 35-kilogram sack of coffee cherries, which yields only 12 to 14 kilograms of roasted specialty coffee.

This is not factory coffee. Every bean tells a story of extraordinary human effort, pristine mountain air, volcanic soil, and decades of farming wisdom passed down through generations of Indigenous families.

When COVID-19 struck, PhilCana's Philippine operations paused and McFadden returned to Alberta, Canada. But the mission never stopped. Today, Black Falcon Coffee continues that legacy β€” bringing the world's finest Philippine specialty coffee to discerning customers worldwide.

Why Black Falcon
Stands Alone

A note on origins: "Italian coffee" refers only to a roasting style β€” Italy grows no coffee whatsoever. True specialty coffee begins where coffee actually grows. Unlike blends named after European countries, Black Falcon traces its journey from the volcanic soils and misty mountain farms of the equatorial Bean Belt β€” where coffee has been grown for centuries.

01

Medium-Dark Roast β€” Never Burnt

Most Turkish coffee uses over-roasted, essentially burnt beans β€” destroying the natural flavors. Black Falcon uses a precise medium-dark roast profile that preserves the coffee's natural character, complexity, and naturally occurring sugars that create our signature smooth finish.

02

Proprietary Spice Blend

Our secret blend of traditional spices β€” preferred throughout the Arabian coffee tradition β€” is added at the grinding point. This is the cornerstone of Black Falcon's flavor: no bitterness, no aftertaste, just pure aromatic perfection in every cup.

03

Naturally Occurring Sugars

Our carefully selected beans contain exceptional levels of naturally occurring sugars β€” not added sugar, never artificial. This gives Black Falcon a naturally smooth sweetness that no other coffee in the world can replicate. It is a function of terroir, timing, and expertise.

04

Consistent Roast Profile

Every batch follows our exact roast profile β€” developed over years of refinement. The result is the same extraordinary cup every single time. While natural sugar content may vary slightly between harvests, the experience never disappoints.

05

Global Bean Sourcing

We travel the world seeking the finest growing regions β€” Ethiopia, Colombia, Yemen, Indonesia, Philippines and beyond. We look for perfect elevation, correct soil composition, and our preference for morning sunshine falling on the fields during cool early hours for full-spectrum light.

06

100% Hand Sorted

Every single bean that enters our roaster has been individually hand-inspected first. Defective beans, under-ripe or over-ripe cherries, and any imperfections are removed by hand. This labor-intensive process is what separates specialty grade from commercial grade coffee.

The Flying Dragon

Deep in the coffee forests of Benguet, a remarkable creature makes its home among the trees. The Flying Dragon β€” Draco volans β€” is a small lizard with extraordinary wing-like membranes that allow it to glide from tree to tree.

What makes this creature extraordinary for coffee is its diet: it feeds on the very insects that threaten coffee crops. The Flying Dragon is nature's own pest control β€” a guardian of the coffee forest that has protected these trees for millennia without any human intervention.

Our Flying Dragon Coffee brand honours this incredible creature β€” coffee's unsung hero β€” and represents our most prestigious, highest-scoring award-winning beans. When you see the Flying Dragon, you know you're holding something extraordinary.

Pulling Back the Mask
on Specialty Coffee

The specialty coffee industry has a dirty secret. And as farmers who have spent years in the fields, we feel it's time someone said it plainly.

The Geisha Myth

Panama Geisha became world-famous when a single lot won a major competition. What happened next? Every farmer growing Geisha in Panama β€” and soon across the world β€” began marketing their coffee as premium Geisha, commanding extraordinary prices. But here is the truth: in any growing region, only one small batch from one farm in one season is ever truly the winner. The farm next door, growing the same variety in similar conditions, may produce coffee scoring 20 points lower. That is not premium coffee. That is ordinary coffee wearing a famous name.

The Kona Effect

Hawaii's Kona coffee commands a premium price worldwide β€” built almost entirely on the reputation of a single competition win from decades ago. Today, the vast majority of coffee sold as "Kona" scores nowhere near the levels that won that original recognition. Consumers pay top dollar for geography and history, not quality. The name became the product. The coffee became secondary.

This Happens Everywhere

Ethiopia. Colombia. Jamaica. Indonesia. Every time a region wins a prestigious competition, the entire region's output rises in price β€” regardless of whether individual farms have earned that recognition. Micro lots of 100 to 300 pounds of truly exceptional coffee get lost in a sea of mediocre beans all wearing the same prestigious regional label. You are paying for a story, not a score.

The BlackFalcon Standard

We do not sell geography. We do not sell history. We sell scores. Every coffee we release β€” from our standard Black Falcon blend to our exclusive annual top lot β€” is graded, verified, and honestly represented. Our top lot reward for long-term delegators consists of genuine micro lots of 100 to 300 pounds total production. Not a regional label. Not a famous variety name. The actual best coffee we produced or sourced that year, period.

Follow our Blog to read the story of each year's top lot β€” which farm, which harvest, what score, and why it earned its place. Transparency is not a marketing strategy. It is the only standard that matters.

Where Our Coffee
Comes From

  • Elevation & Morning SunshineWe source from farms at 1,350 to 1,700 metres elevation in the Cordillera Mountains β€” where morning sunshine falls on the fields while temperatures are still cool, producing slow-maturing, extremely hard beans with concentrated, complex flavour.

  • Beyond Direct TradeWe pay 20–30% above any commercial buyer in the country. No cooperatives, no middlemen. We know the name of every one of our partner farmers β€” we have pictures, videos, and GPS coordinates of every farm. Some partner farmers live in areas that take eight hours on foot just to reach the road.

  • Indigenous Peoples of BenguetAll coffee grown, harvested, and processed by Indigenous Peoples of Benguet. One 35-kilogram sack of cherries takes over ten hours to gather on steep 45-degree slopes β€” and yields only 12 to 14 kilograms of roasted specialty coffee. This is not factory coffee.

  • GODGROWNβ„’ β€” No Chemicals, EverWe partner only with farmers using traditional methods β€” no chemicals, herbicides, or pesticides. Birds, bats, rats, civet, and typhoons often reduce crops by half or more. The farmers accept this. So do we. The result is coffee grown the way nature intended.

Meet Our Farmers

Real people. Real farms. Real coffee.

Irvin Camilo

Kibungan Β· 1,450m elevation Β· 2 hectares

Irvin, 42, farms with his wife Bremenda and their four children in Kibungan. Fresh mountain spring water feeds the farm, and Alnus trees provide shade while supplying most of the nutrients the coffee trees need. He grows 100% washed Arabica β€” Typica and Bourbon β€” harvested December to February. Organically grown, USDA certification in progress. Despite losing 10–20% of last year's crop to Typhoon Ompong, Irvin's quality has never wavered.

Varietals: Arabica Typica & Bourbon Β· Washed process Β· 9.5% moisture

Clara Gamotlong

Talingaroy Β· 1,350m elevation Β· 1 hectare

Clara, 72, and her husband Albert, 74, have farmed their land in Talingaroy their entire lives. Mountain spring water, Alnus shade trees, and Clara's extraordinary care in selecting only the ripest cherries define her coffee. She grows Arabica Typica, Bourbon, and Granica β€” all washed process β€” alongside citrus, papaya, banana, and passion fruit. The farm sits on steep slope terrain prone to landslides, and Clara navigates it every day with quiet determination.
